This is a reduced calorie version, but the taste is still there. You can add other things like mayo, pickles, tomato, etc., but need to adjust calories for each additional item.
Lunch time mushroom soup is really great. Its quick and fills you up. One pot makes my lunch for half a week. I usually have it with whole grain ritz crackers stacked with a dab of original hummus and sliced cucumbers. Its a fantastic quick lunch.
This delicious flatbread pizza may be eaten as a light lunch or dinner, accompany it with a side salad. I tried a similar version of this at a restaurant and it was loaded with calories/fat... I couldn't even eat more than 1 slice. So, I decided to experiment and came up with a much, much lower calorie/fat version...and you can eat the whole pizza and not just a slice!

A light dressing that has the high fat flavor that makes Thousand Island a timeless flavor. May be thinned to desired consistancy. If using to dress salad may want to thin but using as a sandwich spread may wish to leave at full recipe strength
Delicous pasta salad, I use a smaller bottle of italian dressing so it has a more pleasant taste. A very good meal or snack packed with vitamins
I put this together for lunch when I got home late and was really hungry, but didn't want to binge. It consisted of what I could find in the fridge, freezer and pantry. This makes 2 servings, so I have something to heat up quick later.
