I make this recipe on the week end when I have time and am going to have a busy day. It has complex carbs and plenty of protein so if I'm too busy to eat as I should my blood sugar doesn't hit the floor in the afternoon.
I make this up at the beginning of the week and eat it as a side dish all week long. It is wonderful hot or cold in salads.
I make this recipe with low sodium bacon, light cheddar, and low fat cream cheese as well if you want an even lower calorie option!
I love making soda bread. It's so damn hearty and filling and most importantly, it reminds me of my Grandma. The only issue is that soda bread tends to be extremely caloric and once you slather Irish butter all over it any and all hopes of it being a healthy table bread option go out the window.
So, I created this healthier version of my Grandma's brown bread recipe. And, as a bonus, it's vegan!
I like to make a big crock pot of these beans, and then freeze them in serving sized containers for easy use later. More delicious than a can, and less sodium!
