Introduction

I was looking for Greek Rice recipe online & browsed through several of them & then came up with this recipe. You can add feta cheese if you like. I have not added any to save calories.
You can also use any other vegetables as per your preference.

Ingredients

    1 1/2 cups Long Grain Basmati Rice
    1 teaspoon Extra Virgin Olive Oil
    1/8 medium onion (chopped)
    1 1/2 teaspoon or 1 1/2 clove garlic (chopped)
    1/4 cup frozen peas & carrots
    1 1/2 tsp dried mint leaves
    1 1/2 tsp salt
    1 tsp black pepper powder
    1 1/2 tsp Mrs. Dash Garlic & Herb Seasoning Blend
    1 lemon juiced



Directions

Cook rice 90% with one teaspoon salt & drain them.

In a wok heat olive oil, then add onions and garlic and stir fry for a minute. Then add the vegetables and mint and stir fry for another 2 minutes.

Now add rice, salt, black pepper powder, garlic & herb seasoning & lemon juice.

Toss well & cover & cook on medium low heat for 5-10 minutes or till the rice gets heated through.

Serve warm.

Serving Size: Makes six 3/4 cup servings
