Created this to change up my lunch salad and OMG I love it. Next time may toast the pine nuts and maybe add a little parsley or basil or maybe not cuz like I said "Luv it!". I listed as vegetarian but it's also vegan, gluten free, low carb and diabetic friendly.
An easy vegetable soup - low in sodium, high in vitamins. Can easily add other veggies on hand - fresh, frozen or canned although watch the sodium in canned.
Supposedly the body does best at a slightly alkaline level. This soup is filled with ingredients which are supposed to be alkaline (to the body lemons which we know to be acidic are alkaline - same with tomatoes)
A pretty basic stew made from readily available on-hand items. It doesn't take long and makes for a quick meal idea that can feed a family for a very affordable amount.
A low carb recipe. I leave out the tortillas though. Chicken could be added for more protein and be sure to add cheese and avacado to individual servings of soup. If you are not watching your carbs, then you can add tortilla strips to your bowl of soup. Make homemade ones by frying strips of corn tortillas in oil until crispy or use packaged tortilla chips.
This is a recipe my mom has been using for years. I adjusted a few things to lower the sodium and fat so I hope you enjoy. It is a little spicy so be careful if you give it to your little ones. All I know is I loved it when I was a kid and still do. I didn't put salt in the ingredients because it's your choice to put salt in.
I used up a slow-cooked meal of Sauerkraut, potatoes and pork riblets to start this soup. I've done this before and it is so yummy, I had to write it down this time. The taste is perfect.
