Introduction

Created this to change up my lunch salad and OMG I love it. Next time may toast the pine nuts and maybe add a little parsley or basil or maybe not cuz like I said "Luv it!". Ingredients

    1/4 Avocado - diced
    1 cup diced tomatoes
    1/2 cucumber (avg size) - diced
    2 T pine nuts (optional - toasted; may increase prep time if not pre toasted)
    1 T Olive Oil
    2 T Balsamic Vinegar
    (I'm guessing on amount of oil and vinegar but since I mixed them in a small (2 oz) plastic cup it's probably close to what I listed)

Tips

mine sast in a lunch bag for about 3 1/2 hours so the flavors had time to blend. Not sure if it would be as good if eaten immediately and I don't think that it would store too well with the cucumbers and tomatoes but maybe I'll try making it the night before to see if it's possible.


Directions

Put avocado, cucumber, tomatoes and pine nuts in bowl. Mix dressing and pour over top.
