Breaded Eggplant rounds, topped with the healthy jar sauce of your choice (we like Aldi's All Natural Tomato Basil by Grandessa), and some part-skim Mozzarella make for a wonderfully crispy baked, not fried, eggplant parmesan even the kids will love!
