This soup can be served for lunch or as main course for dinner with a salad and bread sticks.
can't remember where I got this recipe, or I'd give credit. It is a favorite around our house. Serve with tortilla chips, or by itself as a side.
I love this salad because it is an easy way to use up the last of veggies that are about to go bad. It is also a fun change from a regular salad. (You can use any of these ingredients, as well as fresh peas, cauliflower... anything crunchy. Any combo of 4 or 5 ingredients will taste great.)

I came up with this recipe, because after a crawfish boil that I hosted, I had some leftover crawfish tails, corn and potatoes. If you are using leftovers from a crawfish boil as I did, you probably won't need the extra spice. (I still added it because I like it spicy!) But, if you aren't using leftovers you will want to add some spice (cayenne and/or creole seasoning) to the heat you like.
You can add/substitute any vegetables, basically, whatever is left in the fridge. I even put lettuce in before it gets bad. The potato is good to give a thicker consistency to the soup, and I never omit the carrots.
I have used canned organic beans, well rinsed. You can add broccoli shoots instead of pea shoots for added crunch. Cilantro also adds a different flavour.
If you have a craving for nachos try this huge healthy and spicy salad. Crumble a few nachos on top for an extra crunch. You can put in any vegetables you want!
