I make this salad as a replacement of more traditional pasta salads. It keeps well and tastes light and refreshing on hot summer days. I use whatever veggies are in the fridge and try to use as many colors as I can.
Orignal recipe came from allrecipes.com. Substituted ground turkey for the ground beef, and added 1/2 cup beef broth because we like ours a little brothy.

A quick Italian flavor soup with my favorite veggies, tomatoes and zucchini. I added leftovers and frozen foods, broth. This is soon to be a new family favorite.

I got this recipe from "Diet 2010" magazine by Better Homes and Gardens. I am vegetarian, so I left out the chicken it calls for. This reduced the calories from 320 to 166.3!
