This roasted root vegetable soup combines parsnips, sweet potatoes and turnips with a little sweetness from a granny smith apple and a little kick from a jalapeno pepper. This is a vegan and gluten free soup. It is hearty and very filling. It also makes a ton! So its a great go to meal in a pot to keep in the fridge for the week or freeze. The sodium could be reduced by buying all low sodium items and washing the ones that aren't.
This is so delicious on a cold winter day, and you can smell it all day in the slow cooker. Also, barley is good for lowering your cholesterol. I have modified the recipe to make it low sodium, but if you prefer you can use higher sodium ingredients and add more salt.
This recipe while very simple is full of fresh flavor. My dad and I won a church chili cook-off with this recipe! The Italian sausage and jalapenos give it a subtle heat without the full burn of some chilies. Enjoy!
