Sweet, peppery bacon, apples, hard boiled eggs and onion top spinach. The dressing is bacon grease, cider vinegar, dijon mustard and brown sugar.
Essentially invented as a leftover soup with lentils for bulk. The chorizo, the original ingredient I needed to use up, adds a richness and a meatiness to the earthy lentils. You can jazz it up with whatever spices or veg you have to hand. I reduce the fat and saturates by skimming as much of the chorizo oil as possible from the surface of the soup.

I found this recipe in a stack at my mom's, I modified it to make it more healthy. It is delicious!
