Guacamole is a dip made from avocados. It originated in Mexico. The name is derived from two Aztec Nahuatl words - ahuacatl (avocado) and molli (sauce). This recipe is so simple you might think there is something missing. NOT! Serve as dip with chips, in place of butter or mayo on sandwiches, hamburgers, over omeletes, tacos, enchiladas, quesadillos, fajitas... Especially good with chicken and turkey.
Delicious and different. I like to use this as a spread in my turkey wraps. It is also good if you thin it out with a little chicken broth and serve warm as a side with beef or lamb.

This is my version of the Portuguese soup known as Caldo Verde. I reduced the amount of potatoes used to keep the calories down and left out the meat. Enjoy!
Some people like to puree black bean soup. We like it kjuust like this with a dollop of low fat sour cream and maybe a couple of peices of avocado on top. I also like to have this with some leftover rice throw in.
The original recipes calls for pancetta, I never use pancetta in this recipe and I don't miss it or the added calories. I did didnt have green beasn this time and rthose i do miss. As for the pasta if i have leftover rice or pasta I will throw a little of that in it. I never put pasta in my soup because it tends to soak up all the liquid so I make pasta on the side.

Very filling !! This recipe is great by it's self, or to add with a meat of some sort for a Chinese type meal.

This is what tends to me in my cupboard but its always fun to throw in other fun things that you find. I make mine big cause it tends to be my and my roommates food. Though its a no brainier to throw things into a salad these are my favorites!
