Take any frittata recipe and bake it in muffin cups. This combo happens to be half whole egg, half egg white, with chicken, spinach, and feta.
Serving = 1 "muffin" (but you'll probably want 2 for a meal)

In trying to stretch ingredients to feed five kids, I made these things using my knowledge of baking. Turned out fluffier than I expected, but the kids loved them. They have started liking raisins because of these biscuits.

Scramble 3 egg whites (1/2 c) with 1/4 c chopped red onion, 1/4 c sliced mushrooms, 1 Tbsp shredded low-fat Cheddar, and 1 tsp fresh herbs. Serve with 2 links Old-Fashioned Breakfast Sausage; 3/4 c fat-free plain Greek-style
yogurt mixed with 1 c fresh strawberries and 1 Tbsp ground
flaxseed; 1 c low-sodium vegetable juice, and 1 c green tea.
Like Corner Bakery's Chilled Swiss Oatmeal, but I added protein powder for more protein
