You can whip these up quick on Sunday, wrap tight in wax paper, freeze and have delicious breakfasts for a couple of weeks! Microwave on high for 30 seconds, flip it over and give it another 30 seconds. Delish!
The idea for this came from a recipe on the Rachael Ray show, but I adapted it to my family's likes, as well as made individual pies instead of the large pie.
Note: As I said, this recipe can easily be adapted to your own tastes, but any changes in ingredients will naturally alter nutritionally numbers...
I like to eat a big breakfast that fills me up for hours, I find if I start my day off with carbohydrates I get very hungry very early so I start off with lean proteins and veggies. It keeps me full for hours!
One way to get your veggies is by surrounding it with eggs, but I don't have the patience for an actual omelet, so I came up with this.
The name says it all :) In this recipe I have used soy butter due to being allergic to nuts, but the result is the same, pure yumminess.
The spinach is the L in our BLT and the salsa is the T-and it's an egg scramble-not a sandwich-means low carb :)
