Pancakes with 6 egg whites. A good friend of mine makes pancakes using this recipe with 6 whole eggs and butter and oil instead of unsweetened applesauce. They are delicious. I've adjusted the recipe to make it more "healthy". If anyone has any ideas on how to make it better or just plain hates them please let me know! My feelings won't be hurt and I'm looking for good ideas!

The substitutions here are as follows:
I used Unsweetened shredded coconut, instead of sweetened, believe me, the recipe has enough sweetness going on with the brown sugar, carrots, apple and apple sauce, it doesn't need more.
I also use pumpkin seeds instead of sunflower seeds or wheat germ, and instead of 2/3 cup vegetable oil I use 1/2 cup apple sauce and 3 tablespoons melted virgin coconut oil.
Finally, weigh, don't use measuring cups for the flour and sugar. King Aurthur always recommends weighing, and that's because measuring cups are inaccurate. A cup of flour should be 4.25 ounces, but when you scoop flour you compact it, and the difference is huge. I get around 5 ounces per cup when scooping, which in this recipe would give me an extra 1/2 flour. That makes the muffins too dense and dry. Always weigh your flour, it's what the best bakers recommend. : )
Very adabtable tu utilize whatever is in your pantry, or to lower the calorie count.
After reading "Born to Run", I started making these pancakes. They are one of our favorites! I love to add cinnamon and either walnuts or pecans.
place all ingredients except eggs in a baking dish. Make two shallow hollows, crack eggs in. Bake at 375 until whites fully cooked and yolks cooked to the consistency of your choice. My personal preference is for a runny yolk, to ensure best mixing of flavours.
you could add cheese if you eat that. also cold lettuce and tomato as a side makes this a great brunch item.
make any necessary adjustments on quantities for your leftovers.
