Originally a recipe in clean eating magazine, I reduced the olive oil and used soy cheese instead of dairy.
Wanted to find something to cook for brunch, didn't have exact ingredients others used, so this is what I came up with and it was great even without any syrup. Suggested to serve with sliced bananas or other fruit on the side.
The flavor!! At the peak of apricot season, I had a lot of fresh apricots to use up fast. I'd stewed some yesterday to use as a substitute for applesauce in a muffin recipe. This is how I used up the rest. It is fabulous! I'm sure you could substitute stewed dried apricots, but I'd add a few more depending on how they plump up.
I don't consider this a healthy diet food. It's a favorite recipe asked for at my workplace, and I wanted to calculate the nutrition info today, so here it is! It can be made up the night before and just baked in the morning.
My daughter insists that her eggs are always cooked this way -- the way I fixed them for her when the only vegetables she'd eat were the ones I sneaked in... like the garlic here.
This quiche is great for breakfast, lunch or just as a snack. It forms its own pseudo-crust from the addition of the flour and has a nice mildly spicy flavor from the addition of the sausage and chiles. ENJOY!
These delicious sausages are not for your everyday breakfast, but they sure hit the spot when you are looking for that great maple flavor on a special occasion. Using chicken sausages instead of pork lowers the fat a lot. Also, using light syrup instead of full sugar reduces some of the sugar and carbs without taking away the flavor. ENJOY!
Mix together 1/4 C Sour Cream, 1/4 Cup Honey and about 2 Tablespoons Sliced Almonds (or other nut). Serve over Waffles with Fresh Fruit.
Strawberry Spinach Salad -- 2 servings. This is a low sodium recipe. Fresh sliced strawberries and sliced cucumber can be added for variety. This can also be used as a main dish by topping it will gripped boneless chicken (that may be marinated ahead of time in extra dressing).

These blueberry pancakes are great for those looking for low-sodium pancakes. Sprinkled with powdered sugar, they're light and delicious!
A great tasting muffin that has 10 grams of protein and only 13 grams of carbs per muffin!! Plus, if you use Nature's Hollow Blueberry SF Preserves it will reduce the sugar to 3.3 grams of sugar per muffin!

This is a very yummy bundt cake I got off of recipezaar that was definitely not a low fat cake, but definitely DELICIOUS!! I wanted to be able to have it more often since my kids LOVED it so I played around with ingredients to see if I could make it healthier!
Tlhese rolls are EASY to put together and done for my husband's lunch. These rolls are big enough for a sandwich, but you could make them smaller and use for dinner rolls.
This is a recipe I adapted from the Lovely Little Kitchen. My son asked me to make a healthy option to this wonderful recipe so I replaced the oil with applesauce, sugar with splenda, and brown sugar with coconut palm sugar. I then added a cup of finely grated carrot, a cup of oat bran, and a cup of raisins, a tsp of baking powder and doubled the original amount of spices. I make this as mini muffins because my 2 yr old grandson loves them and isn't able to eat a large muffin. The size makes it a nice afternoon snack for grandma :)
