Turkey Enchilada Recipes

A low fat remake of a New Mexican favorite. I used Cervantes Red Chile sauce and fresh roasted green chiles, so you may need to substitute canned green chiles.

Simple to make, you can make this meal the night before, so when you get home from work or a day of shopping, pop into per-heated oven for 1 hour and dinner is served This is a Weight Watchers meal! 9 pp pre serving

This dish could be made much, much lighter with recipe substitutions. The ingredients listed are what I had on hand - the NI reflects that. I didn't want to cheat on my tracker! :)

I do not use canned beans so the sodium content will be escalated if you opt to use the canned variety.

I love the flavors in a chicken enchilada, but not the fat. I am always on the go, so this is my hybrid version of getting those flavors with out the fat and sit down or going thru drive-thru. Hope you enjoy it.
