Ingredients

    4 slices bacon
    8 carrots, chopped
    1 onion
    1/2 Jalepeno, chopped
    2 cloves garlic, minced
    6 cups of water
    1 teaspoon Chicken bouillon
    1/2 cup cheddar cheese
    1/4 cup cream

Tips

Careful with the Jalapeņo, you can use much less if you want. You can sub 1/2 cup half and half and 2/3 cup of cheese if you like.


Directions

saute bacon in a stockpot untill crisp, add carrots, onion and jalapeņo, cook for five minutes. Add water, garlic, bouillon, salt and pepper. Bring to a boil then simmer for 25 minutes. When done process in two batches in a blender or just puree with a wand blender. If processed in blender pour back in stockpot and add cheese and cream.
