Spelt and Oat flour are listed and replace the originally called-for all purpose flor, but almost any flour blend will work. You can add anything you like to these muffins- fruit, nuts, cheese (omitting the nutmeg), etc. They freeze well, and are easy to make.
I've adapted this recipe quite a bit from Betty Crocker: using ricotta and Greek yogurt instead of half & half and sour cream. I also added mushrooms. It is super tasty and moist.
My daughter found this recipe and made them. Love care and attention made them delicious, but she would only let me have 2 of them.
