This is a great Southwest vegetarian based stew which makes two large or three smaller servings. You may add chicken, a link of your favorite sausage, shrimp or omit the meat to have a vegetarian dish. I have also added fresh red and green bell peppers with the onion mixture if I have them on hand to add additional vegetables.
Very tasty & low fat muffins...especially great the next day (and low fat too). Low sodium and soooo good!
My whole family loves these, and they only have 3 Tbls of butter in the whole batch! (half as much as the recipe i converted it from) I break them and spoon stew over them, or they are great with gravy or honey. Very light, not heavy and greasy.
