Ingredients

    1 1/4 cups whole wheat flour
    1/2 C. splenda
    2 tsp Baking powder
    1/4 tsp Baking soda
    1/4 tsp salt
    1 1/4 c mashed fully ripe banana (# med)
    1 C. All-Bran Bud cereal
    1/3 C skim milk
    1 tsp vanilla extract
    1 egg
    1/2 cup chopped walnuts

Directions

1. Combine flour, splenda,baking powder, soda and salt. Set aside.
2. In large bowl, combine bananas,cereal, milk and vanilla. Let stand about 5 minutes or untill cereal i softened. Add applesauce, egg and walnuts. Beat well. Add flour mixture, stirring just untill combined. portion batter evenly into muffin tin lined with cupcake papers.
3. Bake at 400 F. 18 -20 minutes or until golden brown and firm to the touch
Yield: 12 - 18 muffins
