Eggless banana bread muffins, made high in fiber through flax seed and oats. A filling snack or breakfast treat.
inspired by Veganomicon's Lower Fat Banana Bread
ps: i had no molasses so i used 2 tablespoons brown sugar + baking powder.
2 Tablespoons of Molasses could be used instead, and in that case just use 1/2 cup of sugar.
A fat free adaptation of the recipe of Bob's Red Mill Apple Spice Bran Muffins. Reduction of calories per muffin by 100, and fat to 0.
Cheese & Peas are optional, you can also add capsicum or other vege as desired.
I don't peel new season potatoes but peel them otherwise
Mix all ingredients together and put in Waffle Iron. Delicious, crispy, it makes lots of waffles good for freezing to eat later when there's not time to cook breakfast.
These muffins are low fat, low sodium, high fiber, and, I think, Delish!
These muffins are ALMOST savory. They have a hint of sweetness and are great with butter or jam. Lots of fiber and protein. I made these for my husband - he doesn't like cinnamon, nuts, coconut, or apples. A challenge, yes, but they turned out well.
This recipe could make 24 small muffins or 18 medium muffins. If you add more fruit, nuts, or seeds this recipe could make 24 large muffins.
Eat two or three of these in the morning and a high fiber muffin and you're good to go! Low calorie, high protein. I would have used fresh chopped onion if I had it on hand at the time.
