Originally, were Laurel's Kitchen Date Nut Muffins (p. 99), but I used cranberries and pecans. They could use a little sweetener, too, but I didn't add it. They're very sincere.

Makes 18-24 muffins. Nutrition info is calculated on 18 muffins. These are low in fat and loaded with nutrient dense fruits. I use half whole wheat flour for extra nutrition also. I cut the oil in half from the origional recipe (was 1 cup) and you can't even tell the difference! Actually I think these are better--not at greasy. I also cut out 1/4 cup of sugar as the fruit adds sugar too. You could use sugar sub and egg beaters to cut out even more calories.

This quick and easy breakfast has saved me on more than one hectic morning. This and a cup of tea is a really filling breakfast that will hold you over until lunch. Also, I have provided name brand products for the most accurate calorie count, but similar products with comparable calorie counts should sub just fine. Also, I don't usually keep track of sodium, so you may want to double check that!
