Part of a series of experiments to help me recreate my favorite comfort foods. This one is a great base for adding other ingredients, or just having a big spoonful with a pat of butter and some syrup! Ingredients

1 cup yellow cornmeal
1 cup milk
1 cup egg substitute
3 cups water, warm
Directions
Preheat oven to 400F. Lightly grease a 2 quart casserole dish.
Mix warm water and corn meal together and slowly bring to a boil, reduce heat. Stir constantly, and simmer about 3-5 minutes until cornmeal forms a thick mush.
Mix egg substitute and milk together until frothy then add a little at a time to the warm mush, until completely incorporated. Don't try to mix it all at once or your batter will be lumpy.
Pour into greased baking pan, put into 400 degree oven, bake 45 minutes. If you like, sprinkle top with shredded cheese and let sit about 5-10 minutes or until set.
