This is our own take on vegan pozole. It is delicious and best when simmmered a long time or made up to 2 days ahead. Top with shredded cabbage, lime wedges, radishes, avocado, or whatever else suits your fancy! Enjoy!
I made these with Becel rather than butter as i have high cholesterol and heart issues. You can roll these into 20 individual cookies balls and keep them in the fridge or freezer, but i wanted to try them as cookies and they worked just fine! Im thrilled!

The amounts in this recipe are very forgiving. You can omit the spices, or change them. For example, if you don't have coriander, you can use nutmeg.
You can use the dried fruits that you like best - many sugarplum recipes use raisins - we prefer craisins.
Allergic to nuts?
You can leave out the nuts totally, and only add as much honey as you need to help everything "stick" into balls. (You may not need any hoeny at all if omitting the nuts.
We roll these in coarse sugar prior to serving - but the sugar is not included in the calorie count.
This is a Christmas morning tradition in my house!! We make it the night before and put it in refrigerator... then I get up in the morning and bake it... it is so Yummy!!
