This is my mother's recipe for rhubarb pie. If you can find anything to substitute for Crisco in the crust that would decrease the fat and calories, go for it! I haven't been able to find a healthy substitute for the Crisco yet.

Like anything that I cook, I really don't measure. I apologize in advance, but I like to freestyle. This was my best attempt at remembering what I put in this dish. The measurement for the seasonings are NOT dead on. All I can say is that it was yummy and I am quite confident that you can tweak this to make it all yours. I don't like to use fat free cheese to compromise taste and add sodium, but it's all up to you. The pumpkin adds creaminess to this dish, so I wouldn't take it out. Trust me, you barely taste it.
