This makes two large loaves and they keep well tightly wrapped and also freeze very well.
I wanted to take my chocolate cake and make it a "yellow cake" well this is as close as I have gotten so far.
*if you are looking for a "yellow cake" I think you could replace the banana with pumpkin, squash or The Sneaky Chef's orange puree. I will probably try this next time.

These bran muffins are VERY moist! And they definately do what they are designed to do, besides tasting wonderful! You can use the light sour cream and unsalted butter to cut down on the fat and sodium! Enjoy!
