This is a great and quick dessert to whip up. I love Cheesecake and this taste just as good as any Cheesecake minus the guilt (and the crust of course). It's low in fat and less than 3 grams of Carbs per serving.

Step 1 - In a food processer grind cookies to crumbs
Step 2 - Add 8 oz of cream cheese to crumb mixture and blitz until combined
Step 3 - Roll mixture into 35 individual 1/2 inch balls and place on cookie sheet lined with wax paper.
Step 4 - Put cookie sheet in fridge
Step 5 - Melt dark chocolate in a double boiler
Step 6 - Dip each ball into chocolate, tap off extra and set aside.
Step 7 - Once dry, refigerate and enjoy
