A little variation from my original lemon cheesecake recipe. This one has no crust, therefore the serving size has been doubled!
This recipe was given to me at a craft fair, where it was explained to me that during the depression, this was a popular cake since luxuries like shortening, oil, eggs, sugar and flour were often unavailable.
I got this recipe from my aunt who suggested using it for all my zucchini's. I did cut down the sugar from the original recipe and the low sugar version is here.
These are some good ,simple ginger cookies that ring of Christmas,but taste good any time of the year.

I like to add coconut extract for extra coconut flavour! These can be dipped in melted chocolate and refrigerated.
