This marshmallow recipe is a low-calorie way to satisfy my craving for Pignoli cookies… Ironically, I use almonds instead of pine nuts, purely because pine nuts are so expensive and have about 20 calories more than almonds per ¼ cup. Substitute the almonds for pine nuts, if you prefer!

This was my Grandmothers recipe- and I still make it often. And now that I've had it calculated- I won't be making it as often....
Made some substitutions for sugar/fat free versions of the original recipe's ingredients.
Absolutely amazing fudge! These taste like the best of the flour-less deep chocolate tortes, yet with a wonderful coffee & mint flavor (although this has some flour). Even non-dieters don't believe this is 'slimmed down!' This makes an absolutely HUGE recipe -- so I always cool them in the refrigerator, cut them & individually wrap them in saran wrap, then put any that I won't be using right away in a freezer ziploc bag & store them in the refrigerator or freezer.

I've formulated this for one serving, so multiply this recipe times the number of guests you'd like to serve. You can bake it in just 10 minutes, so pop it in the oven during your dinner and serve it hot & gooey for dessert >> very impressive ! This rendition leaves out all of the butter (1.5 Tbsp per serving) >> but NO ONE missed it at all!
