This is the recipe that showed my mother I was able to cook! I got this recipe from Cuisine At Home Weeknight Menus - made some substitutions to lower calories/fat, but it's still very filling.
This recipe comes from the web site Eat Better America, which is run by General Mills. I altered it slightly by using fresh sugar snap peas, more broth, and a half cup of cashews (the original 1/4 cup just seemed too skimpy). I also reduced the cooking time for the veggies so they would be crisper and I added the cashews with the onions.
My husband and I both loved it. My 5 yr old daughter, not so much.
I serve this with brown rice.
Yummy, healthy turkey meatloaf. Add salt/pepper/garlic powder to taste. Like most meatloaf, better the second day, and especially yummy for sandwiches.
I have kids & two out of 3 will eat it w/out a problem. The 3rd will eat anything if it is hand fed to her so I'm not sure how much her vote counts.
This is a Crock Pot Recipe.
If you put this on spaghetti noodles it tastes great but the noodles are NOT included in this recipe.
Now that is a salad its got lots of good stuff and good for you minerals and vitamins! Not to mention great flavors that go together nicely.
