Found this recipe on a website. It is wheat-free, has no added sweeteners, no butter, no oil, no eggs. It is very basic, so you could dress it up with dried fruit, nuts, chocolate chips, or a drizzle of honey. My boys love them. They are NOT a traditional cookie, so if you are looking for a dessert cookie this is not it. This is a great "health" cookie that is all natural and could be used as a snack or as a homemade version of a cereal bar.

I am not a fan of squash except spaghetti squash. I am still up to new foods. I thought I would try other root vegetables and used the squash, potato, onion, carrots and asparagus.
