This is a pretty bland biscotti. The orange & pecan gives it the right hint of flavor. The recipe is basic old school. I've just been tweaking it a bit, trying to make it a little healthier for me. You can make it as fancy as you like, by adding chocolate dipping or drizzle.
I used Splenda for Baking in this recipe. Not the one that has sugar mixed with it, but the regular Splenda. I had to use twice as much Splenda (2 c) as I would use sugar (.75 c) but I figure the least reg. sugar I use works for me. I wanted real-like dense biscotti. Also, the egg substitute I added at the end when the dough seemed a little dry. I only added a splash to moisten it up. This is the 2nd time I've made this, and the first time I made it using Splenda. Just trying to get some real, yet low sugar/fat biscotti while trying to perfect the recipe.
A less fattenning and easier/quicker version of my Original Gourmet Pizza. (Instead of using Cider Vinegar, I use Red Wine Vinegar--couldn't find the info. for Red Wine Vinegar on the food discription link...it can't be bad though.)
YUM! This is a delicious veggie pizza made with no tomato sauce. Instead of tomato sauce, I use laughing cow cheese wedges, which are DELICIOUS!

Alton Brown's "Good Eats" version of quick eggplant parmesan (though modified to remove the olive oil and replace the cream with fat free half and half). Delicious and quick alternative.
This is a higher calorie dish that I only make on special occasions. It's time consuming, but it is SO good!
i dont really know how to work the ingredients calculator but if you use a good spaghetti sauce and fat free parmesan cheese, the calories are way lower!!
this recipe also calls for 1 1/2 pounds of low fat tofu, mashed. i dont include it since i dont like it. i usually add veggies or cheese in its place. i left the tofu in the instructions in case you wanted to add it.

This is a colorful tasty vegetarian pasta sauce. For protein, serve a salad on the side of spinach, garbanzo beans, feta cheese, thinly sliced red onion, and Kalamata olives with a sprinkling of olive oil and red wine vinegar.
This is a wonderful light lunch or a good base for dinner when a protein is added.
I substituted ground turkey, low fat ricotta and mozzarella cheese to make this lower in fat. I made it the night before and put it in the refrigerator. I served it while we were camping the next day and it was a big hit with everyone. I used the no cook lasagna noodles and it really saved a lot of time. They came out very tender. This is also great for a dinner party because you can make it ahead of time.
