My mom made this every summer with food fresh from our garden out back. you could easily make it after a visit to the local farmer's market.
This was a Lombardo Christmas tradition. Each year my mom and all my aunts would make these cookies and the various versions they created. It is a traditional Italian cookie, chocolate with chocolate chips and nuts. Some made smaller, some larger, drier, with nuts , without, with liquor without. they all were special and made with love. Christmas is not Christmas without them.
Below is my version ( I added more cream cheese and chips) To make it healthier you could use egg beaters and non fat cream cheese, no alcohol, etc.
A bread-crumb-less version of chicken parmesan for those who are watching their carb or calorie intake.

I can't believe how good this is and how easy. I used leftover roasted chicken from the grocery store, but you could cook your own or even used canned chicken. The brown rice and beans make it super hearty and filling!
This is my husband's favorite soup. It is a very hearty, comfort soup, great for Fall & Winter.
I made this for lunch one day when I was starving and in a hurry. Just make sure you add your favorite italian spices like garlic powder and oregano to give it a little extra flavor
Kids can help you make this one...the pickiest eater LOVES these! I make these as appetizers...my husband loves them so much, he eats a few as a main course.
