They taste sinful, but are so good. These aren't "mini" cookies. I replaced most of the oil with pureed pineapple, and a bit of yogurt. They are soft, fluffy, and really good out of the oven. They taste good the next day, too. They are pretty "cake-like", and will not crumble after they cool off like most GF cookies. Good for school lunches, trips & picnics. :)
Inspired by Patricia Polacco's book, but made a bit healthier.
Original recipe calls for 1 cup shortening (vs 1/4c butter/ 3/4c applesauce). I also lessened the sugar. (Original recipe is 1 1/4 cup of sugar.)

The only ingredients: bananas, a summer squash, oatmeal, olive oil egg and craisins. They are quite tasty & good for you, too!
I tweaked the Goin Green Smoothie we usually drink. Has carrot & orange juice, strawberries, spinach and a banana. Yum!
I got this recipe off of AllRecipes.com, but added some buckwheat and flax for fiber and replaced the oil with applesauce.
Made with gluten free all purpose, sorghum and millet flours, but can use whatever GF flour blend you prefer. Lightly sweetened. Yum! This is a LOT of dessert for 200 calories!

A yummy and easy way to get those servings of fruit! Has lots of vitamin C! If you dont have the Mango Twist juice you can sub. it w/ another fruit juice like oj or more pineapple(juice)!
A twist on almond butter that includes cashews, sunflower seeds, and coconut oil. I use a Nutri Ninja blender.
You can choose which ever you like. My family loves the mild. It is more kid friendly.
This isn't the healthiest thing going, but for me it's back-in-the-day type comfort food. We always made a similar dish with Kraft Dinner brand macaroni and cheese! I've made this one a smidgen healthier by using the whole wheat macaroni, and using a cheese sauce that does not require butter to prepare. Mmmm... Creamy and filling! 4 g of protien and 3 g of fiber! High in vitamins too! These taste amazing and are so good for you. Pair them with some yogurt and a piece of fruit and they make an awesome breakfast. I make them for my daughter for her snacks rather than buying granola bars with half the nutrition. Feel free to leave out the brown sugar if you dont have a huge sweet tooth like me, the rest of the recipe stays the same! Enjoy....
My whole family loves this recipe, it tastes a lot like salsbury steak but much more tender. I counted each patty as one serving. I think two makes a nice serving but my boys think 5 sounds more like it.
