I was trying to find a low salt version of stuffed mushrooms for a lunch or dinner meal. So I made this one up !

I made this the other day for lunch and Oh was it Yummy. I place spoonfuls on a leaf of lettuce and had a few whole wheat crackers on the side. What a filling and tasteful Diabetic Lunch.
** use Red Wine Vinegar. not cider vinegar.(couldn't find red wine vinegar on add ingred. page)

I got this recipe from a member of the Managing Diabetes Group! team. I left out the Salsa, Green Chilis, and shredded potatoes. I use whole wheat Tortillas instead of white flour ones... Carbs = 27.4 each
Also, I couldn't find just plain breakfast sausage on the list of ingr. so I used the maple flavored one.

A delightful, sweet treat for the taste buds. Calls for 2 boxes (or 1 large) box of sugar-free cherry Jello, 1 Can LITE Cherry Pie filling. 2 cups boiling water.
I cut down the second cooking time to 15 minutes. They tasted OK, but were a little more solid than I like. The original recipe called for a cup of sugar, and they were melt in you mouth.
