A recipe I put together for a healthy lunch alternative. This is at home on a bed of raw spinach as a salad as it is served hot from the microwave.
This is for one cup portion. I usually make a bigger batch using a whole bag of black beans.
Tuna with light mayo, diced green apple, white peper, salt dill weed, in a pita pocket.
A red chilli that you wouldn't beleive is only about 100 calories per cup ^_^
Slice the tomatoes. Dice the cabbage (I like to use red cabbage). Place the tomatoes, basil, cheese, and cabbage on one slice of bread. Place the other piece of bread on top. Heat in a sauce pan or using a sandwich maker.
The sandwich can also be eaten cold, however I find the flavor is better when the sandwich is heated.
So there are a few different steps to this pizza, but it is totally worth it in the end.

This is a salad that is perfect for a cheeseburger craving. For a special low-cal dressing mix together equal parts fat free mayo, ketchup and Dijonnaise.
Homemade beef vegetable soup with a spinach chef salad (we had it with lemon olive oil vinigarette - 35 cal for 2 Tablespoon). Gluten free.
Although the original recipe used butter & cream, I omit these ingredients. If using cream, a little goes a long way, and does alter the flavour if you prefer a creamier soup.
