Homemade and delicious blueberry muffins. Makes 6 muffins in large muffin pan, 1/2 a muffin is a serving.
Spray glass baking dish with non stick spray.
Season chicken with taco seasoning, place in baking dish.
Pour Salsa on top of chicken.
Bake 30-40 min
Boil rice and cook corn according to instructions
Add rice to plate, top with corn and lastly add chicken breast with salsa, add a tbsp of sourcream

Use Ener G baking soda substitute instead of regular baking soda and you get Much lower sodium and you can't even tell that you are missing it. Ener G baking soda substitute is the best secret I have for low sodium baking. Just remember when you use the substitute you want twice as much as regular! So if you want to use regular baking soda, make sure you ONLY use 3/4 tsp!
