This dish is something I threw together on a whim with things I had, just so I could take something with to work. Not including waiting for the water to boil, it took seriously about 5 minutes to throw together. It is also extremely low in fat, if low-fat is your focus. Unfortunately the processed food here adds a bit too much sodium. I would also prefer to find a truly whole wheat gnocchi, as the "whole" wheat gnocchi I bought actually has zero whole wheat in its ingredients. I justified it with the fact that it is more potato than flour anyway (and I am very pro potato).
I saw a not as healthy version of Steak Frites, the French dish, on America's Test Kitchen. I decided to make a healthier version by skipping the butter, choosing top round steak over ribeye steak, grilling instead of frying, dressing the greens with red wine vinegar instead of regular salad dressing, using sweet potatoes instead of white potatoes for more fiber and nutrients, and baking with parchment paper and cinnamon instead of frying with peanut oil and cornstarch.

This meat loaf recipe prepares easily and quickly. Can be made ahead and frozen into small portions; i.e., individual serving dishes.
