This is a basic and quick latin dish (mostly termed picadillo) that my mom made all the time when I was a kid.
It was hard for me to come up with a name for this...I adapted the recipe from a Spaghetti Pie recipe. I used elbow macaroni instead of spaghetti, but the rest is the same, only lighter ingredients.

You can use different cheeses to suite your taste, and can lighten the recipe by using Fat Free shredded cheese instead of low-fat. You can also use a light pasta sauce or whole wheat rotini to cut calories further.
This is a easy meatloaf that I came up with after searching around for recipes that used the ingredients I had on hand. Very good!
You could shave additional calories from this recipe by using a low-calorie barbecue sauce.
