When we got home from a recent expedition to the town market (which included a visit to the fishmonger's stall!) I decided I was really in the mood to cook the hake I'd bought (of all the fish I got) and I was soon trawling the web for a recipe to guide me. The search was made especially easy because I knew I wanted to have lentils with the fish. The recipe I found, from Delicious magazine (via Channel 4) is reproduced below (and includes my recipe for spring greens, an inspired addition):
You can of course use other seafood etc, but this is just a basic, simple recipe, but please feel free to interchange ingredients!
This easy pasta supper is an Italian speciality from Sicily. Picchi-pacchi simply means a fresh, raw or barely cooked sauce, so this tastes really fresh. Optional, is to add some lemon juice at the end to give it a little more zing!
This is a terrific way to cut all the calories out of "traditional fish stips" without cutting ANY of the taste! Should be served with vegetables and rice or buckwheat. **Please see "Delicious Dill Sauce" that goes with this dish.
I use whatever fish I fancy, in this calculation I have used 2 tilapia fillets, but you can use any fish you like, such as sea-bass which is also very good, or lemon sole and so on.
Serve with some new potatoes, asparagus, broccoli, salad or whatever takes your fancy – the ultimate fast food!
