In a large skillet, heat oil on med high heat. Add scallion whites and veggies and red curry paste. Saute 2-3 min. Add shrimp and garlic, cook 2-3 min more. Then add coconut milk and fish sauce. Mix well, simmer for 2-3 min more until shrimp is cooked through. Remove from heat and add scallion greens and cilantro. Add in cooked lo mein noodles and toss till coated. Serves 5
