This is a fast, easy low, carb, low fat main dish. It can be served over rice or pasta but its great all by itself too.

Great as a fajita filling, over rice, in a sandwich with hearty bread, or plain out of the pot!! I sometimes like to add fresh corn and/or beans to the pot in the last couple minutes of cooking.
