Lobster rolls during summer time is a must, but 600 calories a piece can really derail someone's diet. Here is a very flavorful, quick and easy to the pocketbook and one's diet alternative
- Whisk together lime juice, 2 T. of mayonnaise, soy sauce and sugar in a bowl.
- Chop cabbage. Shred carrot. Slice green onions. Snip cilantro.
- Add cabbage, carrot, green onions, cilantro and tuna to soy sauce mixture; mix lightly. Cut bell pepper into thin strips.
- For each wrap, spread tortilla with 1 T. remaining mayo. Top with 1/2 c. tuna mixture. Cover with 2 or 3 spinach leaves and 4 bell pepper strips. Roll up tortilla tightly.
- Repeat with remaining tortillas and filling. To serve cut each roll in half diagonally.
This is the tuna and noodles my Nana made when I was kid, just modified to be a bit healthier and lower in calories. I loved it as a kid and my kids love it today.
Perfect summer dish, takes only a few minutes to cook so the house stays cool! I buy a few tuna steak pouches ahead of time, they keep in the pantry for long periods of time with no refridgeration needed. Just waiting for the garden crop to ripen up!
When last on vacation at Pass-A-Grille, Florida, our favorite dish was a very refreshing ceviche at the Black Palm restaurant. When we asked, they told us that it contained mangoes and orange juice. Here is a recipe inspired by that dish. Very low in fat, carbs and calories and high in protein. A great summer course that pairs well with grilled corn on the cub.
Green beans add snap and color to the garlicky shrimp and butter beans in this Spanish-inspired sauté. Slightly pricier prepeeled shrimp are worth it, given the amount of time they save on a harried weeknight. Serve with quinoa or brown rice.
