This is a slight variation on a recipe by Nancy West from a recipe booklet published in the "Recipes from Chincoteague" cookbook.
I saw this recipe on a TV show and I substituted with more healthy ingredients. You could probably make this even more healthy with lighter version of butter and cream.
We live in Alaska, so salmon is our most common wild food here. We usually harvest several hundred pounds every summer, so we use salmon as most other Americans eat tuna. Lucky us!
I make this with salmon I catch here at home in the summer. Brings back good memories of the Kenai River and warmer temperatures. Very filling and flavorful. Quick and easy dinner.
