Fantastic and fast. Feeds 2 - 4 depending how hungry you are!
Yield: 4 servings

Ingredients:
SALAD:
8 cups chopped spinach (1 bag)
1 cup halved cherry or pear tomatoes
1/2 cup corn (frozen, canned, or cut off the cob)
1 1/2 cups chopped cooked chicken
1 large avocado, sliced
1/3 cup crumbled goat or feta cheese
1/4 cup toasted pine nuts
DRESSING:
3 tablespoons white wine vinegar
2 tablespoons extra-virgin olive oil
1 tablespoon Dijon mustard
salt and freshly ground black pepper, to taste
Directions:
1. Place spinach in a large salad bowl. add remaining salad ingredients.
2. In a small bowl, whisk together the dressing ingredients. Pour over the salad and toss (a little at a time... as much dressing as you desire).

This is an awesome knock off from a local restaurant. Use either as a salad dressing or marinade for chicken or fish.

This Dressing is Great for salad, Sandwichs and anything else you might use dressing for.
This is another type of Pancit Noodles that are eaten mainly in the Pangasinan and Manila areas of the Phillipines. These are always a special treat along with Lumpia at all Holidays and Parties and Family Get Togethers. I prefer using the Chinese Yard Long Pole Beans in this but you can use the Green Beans. I don't use the Red Peppers in mine but you can if you like. I think it tastes better without them. I love to have Lemon or Calamansi Juice mixed with Fish Sauce or Patis over mine when I eat it. It's also very good without the sauce to top it. Try it. You may like it.
A light tuna salad for a hot summer day. Can also be enjoyed on a Flat Out or a Whole wheat tortilla for a refreshing wrap.
This dressing can be made with any berry or fruit, fresh or frozen. Can substitute red wine or balsamic vinegar for the champagne vinegar. Can substitute honey or agave nectar for the maple syrup. This recipe is vegan, low-FODMaP and anti-inflammatory as written.

This is awesome as a dressing, marinade or even stir-fry sauce if you add a little cornstarch.
Simplest dressing I know: equal parts mustard & vinegar and 2 parts honey. You can substitute cider vinegar for more of a kick or dijon mustard for a smoother taste.
