1 large egg; 2 TBSP lemon juice; 1/4 cup plus 1 cup light tasting olive oil; 1/2 tsp dry mustard; 1/2 tsp salt
This is a very tasty way to eat quinoa and vegetable. You can serve it as a fresh meal on a hot summer day, or as a side with fish or chicken.
We used to make this with Marie's Blue Cheese Dressing, but this is a cheaper, healthier version.
Using fat free plain yogurt in place of most of the mayonnaise and sour cream lightens this favorite.
This tuna salad is meant to have light dressing. The mustard should also be more than the mayo. I used an envelope of family pack of starkist tuna, packed in water. It's great on flax seed flat bread :-)
