1. Cook pasta according to directions. Don't over cook. Drain and refesh in a bowl of cold water and then drain again.
2. Mix the walnut oil the safflower oil and the vinegar together and season to tast with salt and pepper.
3. Put the salad in a bowl and top with the pasta, cheese and walnuts. Pour dressing over the salad and toss lightly then serve.
An easy salad filled with nutritional goodness. I created this salad today and will be adding it to my future cookbook.

This is one of my favorite Recipes with my own twist. I lowered the calories and the carbs. It is fresh and filling. And the best part is.... it is so easy!!
Combine 2 cups of corn (fresh or frozen), 2 cups zucchini (chop or dice), 2 cups chopped tomatoes and mint (fresh 2 tablespoons chopped). Combine 2 tbsp of extra virgin olive oil, 2 tbsp lemon juice, 1 tbsp honey, 1/2 tsp salt and pepper (coarsely ground to taste), whisk. Pour over salad and mix gently. Serve with arugula or lettuce. Also great as a salsa or as a bed for grilled chicken or fish.

hey every one this is my fresh fruit salad that my family cannot get enough of when we have dinners together. I think that there should always be some sort of healthy dish at any family gig. Any how you can add other fruit too it and it will be just as delicious. Should you chooes to use apples i suggest that you toss them in some lemon juice so that they will not brown to fast on you.
Throw all these ingredients in a magic bullet or food proceccor to emulsify and you will find yourself pouring a delicious dressing with no guilt!
