This is an adaptation of a recipe I found on Recipezaar called Mediterranean Quinoa Salad.

Great as a topping for salads and baked potatoes just as a salad. High protein and fibre.
When I first tried this salad, I was not very impressed. It just tasted a bit off and the flavour wasn’t what I expected after using so many wonderful seasonings. I read the original recipe and I realized that it said to let the salad stand for about 30 minutes to let the flavours develop! Ah, this made sense. And you know what? It rocked my world after letting it stand for about 30-40 minutes and it was even better several hours later when I had it with dinner. It was a bit sweet, a bit tangy, a bit spicy, and a bit garlicky. Somehow it just worked for me. I really had a kick to my step after eating this! I enjoyed it with an Ezekiel English muffin with hummus.
A great way to get in your protein without the meat, especially in the warmer months!
At 262 Calories, this is a hearty and nutritions salad with almost 12 grams of fibre and 10grams of protein.
I just experimented with this one night and it was amazing. I am guesstimating the measurements, so eyeball it for your own taste.

Hidden Valley Ranch dressing mix with Greek Yogurt, Fat free sour cream and almond milk.
This is a great side dish if you're making fish, but is filling enough to eat for a light and nutrient-filled lunch.
Toss all ingredients. Wait 20 minutes. Enjoy. If your rice wine vinegar is sweetned you may want to pass on the brown sugar. Personally, I am still trying to tame my sweet tooth :-) You will have some dressing left over, just some encouragement to keep eating more green veg.
Simple vinaigrette. I don't shy away from olive oil any more. When I did, I just used a high quality balsamic vinegar by itself as a salad dressing. Now I think the olive oil is good for my skin.
