This broccoli salad is very close to classic broccoli salad, but without the bacon. I like to eat it with bacos or vegetarian bacon crumbled into it directly before serving, so the "bacon" bits stay crunchy.
This salad is both light and filling, and tastes even better the next day!
If you don't want to deal with all the chopping, you can certainly throw the peanuts and vegetables in the food processor and pulse until coarsely chopped. They just look prettier if cut by hand.

1 3oz box sugar free jello (any flavor)
2 6oz containers of Lite yogurt (match jello flavor)
1/2 cup boiling water to dissolve jello
1 small carton lite cool whip

Shredded carrots form the base for this unusual combination of sweet and tangy flavors. The bright orange, red, and yellow colors are also fun to look at.
Mix vinegar, soy sauce, PB, brown sugar, oil, ginger, garlic and whisk together. Shred cooked chicken set aside. Prepare rice noodles, while they are soaking cut peas pods and peppers into bite sized chunks, thinly slice cucumbers and tear cilantro. Mix veggies with cooled noodles add dressing.
Watching Rachel Ray inspired me! this is 4 (old) Weight watchers points per cup, but MUCH less fat than your average macaroni salad...or for that matter, deep fried jalepeno poppers! This batch is HUGE you may want to cut it in half!
