Oval shaped Slow Cooker/ Crockpot. Easy. Adding salsa to bottled BBQ sauce reduces calories per serving. I used low quantity per serving for those who eat small portions. Others can measure 1.5 or 2 servings. Freezes well. DH ate 3 servings. Your quantity will depend on size of loin.
I made mine vegan as my son cannot have dairy. I used cashew milk in place of cow's milk. Almond or coconut milk would be great too. I also added additional spices including nutmeg and ginger. I used less salt than it called for and used Himalayan Pink Sea Salt.
This states that it makes 6 servings, but it was a LOT more than that for us, so I calculated it at about 8 and my portion is even smaller than 1/8th. It makes a lot!
Delicious and filling vegetarian soup. Easy to make in a crock pot, or can be converted to the stove top. The beans are so delicious, nobody misses the meat. Goes great with a salad or grilled cheese sandwihes. Reheats great so make the whole batch.
For creamier soup, puree in a food processor or blender. This is also a great soup for a slow cooker; add all ingredients, and cook on low for 6 to 8 hours.
